Preheat the oven to 450°F, and toss a large bowl of cut sweet potatoes with just enough oil to coat. You can sprinkle paprika and house seasoning on it. Now spread the sweet potatoes on a baking sheet.  Bake sweet potatoes in the oven until it turns golden brown, occasionally turning for about 20 minutes. Let it cool down for 5 minutes before serving.

Ingredients needed:

  • 1 small sweet potato
  • 1 teaspoon of extra virgin oil
  • 1 cup onion finely diced
  • 1 clove garlic finely minced
  • 1 cup tomato
  • 1 cup canned black beans both rinsed and drained
  • 2 tablespoons shredded cheese
  • ½ avocado cubed and 2 tablespoons of fresh cilantro

  How to prepare:
Pierce the unpeeled sweet potato a couple of times with a fork. Preheat the oven to 425°F and place the pierced potatoes on a foil-lined baking sheet. Bake it for 45 minutes.  In the meanwhile, sauté diced onion and minced garlic cloves in a skillet for 5 minutes. Now add tomatoes and cook for 5 minutes. Smash half a cup of black beans and add smashed mixture to the skillet. Cook for few minutes until the stuffing is heated.  Take the baked sweet potato out of the oven and, as it cools down, gently scoop out the flesh in between leaving some skin around the edges. Fill this empty scooped area with the stuffing made. Now top it with cheddar cheese, remaining bean mixture, avocado and cilantro.

How to prepare:
Boil the cut sweet potatoes, and peel off the outer skin when it’s cold.   Mash the boiled sweet potatoes in an electric mixer or a skillet. Blend the mashed potatoes nicely by slowly adding milk to it, ½ cup at a time. You can use more or less milk depending on the texture you would like to achieve.   Add butter to it, salt as needed to cook the sweet potatoes in milk for 10 minutes. Sprinkle powdered pepper on top, to make it as spicy as you need it to be. Serve it hot in a soup bowl.
