How to prepare:
Cut one avocado, remove the flesh and seed.  Use a blunt knife to penetrate inside the avocado, scoop out the flesh with a spoon.  Place in a bowl.  Mash with a fork.  Add salt to the avocado with lime juice, and the rest of the ingredients.  Add chopped onion, cilantro, black pepper, and chiles.   Cover with plastic wrap.  Chill to store.  Refrigerate till you are ready to serve.   Garnish with jicama and serve with tortilla chips.

  • Four medium ripe halved and pitted avocados
  • Half cup of finely chopped white onion

Use a food processor to chop the veggies.  Place garlic into processor and pulse.  Add cilantro, jalapeno, and onion and finely chop them.  Be careful about over-processing.  Add avocado with lime juice.  Pulse until smooth.  Transfer to medium size bowl.  Chop kale leaves.  Add them to the processor and finely chop them.  Place in a bowl with avocado mixture.  Add chopped tomato too.  Stir well.  Lay a plastic wrap over the top to avoiding becoming brown and refrigerate for three days.
