An easy to prepare recipe – it takes only 20 minutes to make 16 cakes.  The ingredients required are as follows:

  • One package of fresh lump crabmeat
  • Three white bread slices (whole grain)
  • Half cup of light mayonnaise
  • Three thinly sliced green onions
  • One teaspoon of Old Bay seasoning
  • One teaspoon of Worcestershire sauce
  • Two lightly beaten large eggs
  • Vegetable cooking spray
  • Salt to taste
  • Garlic-Chive Sauce
  • Lemon slices as garnish

This is how it is prepared:

  • Twenty  cantaloupe or honeydew cubes
  • Twenty thin slices of prosciutto

Takes one hour to prepare, and works as a spread for a sandwich. You can prepare this three days in advance.  The ingredients required are as follows:

  • One bulb of garlic
  • One tablespoon of olive oil
  • Two cups of fully cooked shelled edamame
  • Half cup of ricotta cheese
  • Quarter cup of chopped fresh basil
  • Two tablespoons of lemon juice
  • Quarter cup of olive oil
  • One teaspoon of kosher salt
  • Half teaspoon of freshly ground pepper
  • Assorted fresh vegetables

This is how it is prepared:

This makes twelve servings. You have to prepare a day in advance.  The ingredients required are as follows:

  • One tablespoon of fresh flat-leaf thyme leaves
  • One tablespoon of fresh parsley leaves
  • One tablespoon of fresh tarragon leaves
  • One tablespoon of fresh mint leaves
  • One goat cheese log
  • One French bread baguette, cut into slices
  • Two tablespoons of extra virgin olive oil
  • Half cup of sun-dried tomatoes in oil (drained and chopped)
  • Half cup of loosely packed fresh basil leaves

This is how it is prepared:
Combine the first four ingredients and finely chop them.  Roll the cheese log in herb mixture.  Put it in plastic wrap.  Chill for at least 2 hours.  Preheat oven to 350°.  Drizzle baguette slices with olive oil.  Gently press the slices into the muffin cups in muffin pans.  Bake at 350° for ten minutes.  Remove from the oven.  Allow it to cool.  Spread the goat cheese into cups (baguette).  Top with sun-dried tomatoes and basil leaves.
