Pulled Pork

Pulled Pork
An American classic, this recipe serves six people.  Here are the ingredients:

  • Three kg of boneless shoulder of pork
  • Two teaspoons of smoked paprika
  • Two teaspoons of ground cumin
  • Two teaspoons of pepper
  • Two teaspoons of brown sugar
  •  One teaspoon of salt
  • Two medium mugs of cider
  • One mug of smoky barbecue sauce
  • Soft white rolls
  • Coleslaw

Instructions to prepare:
Get a large boneless shoulder of pork.  Mix the following ingredients:  Two teaspoons of smoked paprika  Two teaspoons of ground cumin.  Two teaspoons of pepper.  Two teaspoons of brown sugar  One teaspoon of salt  Rub this over the pork.   Put the pork in a big casserole dish with its skin-side up  Pour two medium mugs of cider   Cover the casserole with a lid.  Cook in the oven at 150C/130C fan/gas 2 for four and eight hours.  Add a mug of cider if the pork gets dry.  Take out the meat from oven.  Put the meat in a big dish.  Cut the skin off.  Shred the meat using two forks.  Add a mug of smoky BBQ sauce to the casserole.  Season to taste.  Serve the tasty pork in soft white rolls with coleslaw

Chicken Gyros

Chicken Gyros
An easy to prepare recipe that serves four people.   Here are the ingredients:

  • 12 boneless, skinless chicken thighs
  • For the marinade
    • Four tablespoons of olive oil
    • Two teaspoons of dried oregano
    • One teaspoon of dried mint
    • One teaspoon of ground cumin
    • One teaspoon of coriander
    • One teaspoon of sweet paprika
    • Half a teaspoon of ground cinnamon’
    •  Zest and juice of one lemon
    •  One more lemon, cut into wedges
    •  Four crushed garlic cloves
  • For the pita wraps
    • 250g of strong white bread flour
    •  A 7g sachet of fast-action dried yeast
    • One teaspoon of golden caster sugar
    • Two teaspoons of olive oil
      • Half a cucumber
      •  200g of Greek yogurt
      • A small bunch of finely chopped mint
      • One small crushed garlic clove
      • Juice of half a lemon
      • One butter or round lettuce
      • Four large tomatoes, seeds removed and chopped
      • One halved and thinly sliced red onion For the tzatziki

You will also need four long metal skewers.

Instructions to prepare:
Tip the chicken into a large bowl.  Add marinade ingredients, along with one teaspoon of salt and plenty of black pepper.  Mix well to ensure that each thigh is well coated.  Cover and chill in a refrigerator for few hours  Make the pita by mixing flour, yeast, sugar and half tsp of salt in a bowl.  Add 150ml of lukewarm water.  Add two teaspoons of olive oil.  Combine to make a dough.  Knead this dough for ten mins.  Clean and oil a bowl.  Leave the dough to rise till it is double the size.  Divide the dough into four pieces.  Roll out to circles.  To make the tzatziki, halve the cucumber and scoop out its seeds.  Finely chop the cucumber and combine it with the other ingredients and salt.  Combine with other ingredients with salt.  Chill this mixture in the refrigerator until it’s ready to serve.  Heat your grill to the highest available setting.  Fit six marinated thighs on each pair of skewers.  Position these skewers on the top of a roasting tin.  Heat a large frying pan and brush the bread with oil.  Add the bread into the frying pan, and when their underside is golden, flip them.  Put the chicken under a hot grill and cook it for fifteen minutes.  Make four kebabs when the chicken and the pita bread is ready.  Serve these kebabs with tomato, lemon wedges, lettuce, red onion, and tzatziki

Beef and red pepper burgers

Beef and red pepper burgers
Easy to prepare recipe to serves six people.  Here are the ingredients:

      • One red pepper, cut into quarters
      • Two tablespoons of olive oil
      • 400g of lean steak mince
      • One medium egg
      • One coarsely grated carrot
      •  50g of stale breadcrumbs
      • 40g of cheddar, finely sliced
      • To serve
        • Six halved floury roll
        • Three tablespoons of mayonnaise
        • Half cucumber, sliced

Instructions to prepare:
Heat the oven to 200C.  Put the pepper on a baking tray.  Rub it with half a tablespoon of oil.  Roast it in the oven for thirty minutes.  Tip the following ingredients into a bowl and mix them well:

      • Mince
      • Roasted pepper
      • Egg
      • Carrot
      • Breadcrumbs

Shape the mixture into six burgers.  Heat the remaining oil in a large non-stick frying pan.  Fry the burgers for few minutes.  Top with cheddar.  Spread the rolls with mayo.  Add the burgers.  Top with cucumber slices

Crispy sweet potatoes with chickpeas and tahini yogurt

Crispy sweet potatoes with chickpeas and tahini yogurt
Another easy to prepare the recipe that serves 4 people.  Here are the ingredients:

      • Four medium-sized sweet potatoes
      • Four tablespoons of olive oil
      • One large crushed garlic clove
      • One finely chopped banana shallot
      • 400g can of drained chickpeas
      • 75g of baby leaf spinach
      • Small bunch of finely chopped dill
      • Zest and juice of one lemon
      • For tahini yogurt
        • 60g of Greek yogurt
        • Two tablespoons of tahini
        • 20g of toasted pine nuts
        • 110g of pomegranate seeds

Instructions to prepare:
Wrap the potato in a foil.  Put it directly over hot coal for 45 minutes.  Meanwhile, heat one tablespoon of olive oil in a large frying pan.  Add garlic and shallot.  Fry for three minutes.  Stir chickpeas into the mixture.  Warm for one minute.  Add spinach and leave the mixture to wilt.  Add the dill.  Whisk together lemon juice, zest and olive oil in a separate bowl.  Season to taste.  Stir this into the chickpea mixture.  Mix yogurt and tahini and season. Split the potatoes and fill with bean mixture, apply some tahini yogurt and top with the pine nuts and pomegranate seeds.
